from acadian, immigrants to louisiana then mixed with locals - for us, the type of cuisine we specialize in. Our Cajun is well seasoned but not necessarily spicy hot - pay attention!

if it don't end in sauce, it's sauteed with beer, worcestershire & rosemary along with other good stuffs
